At glossy little ONE WALNUT, where the dining room is a small ode to steamship Moderne, chef Marlin Kaplan shows an instinctive grasp of his high-profile downtown audience — and then some. An engaging sense of humor informs modern Americana such as mussels Rockefeller with stout chunks of bacon, and even a grilled cheese sandwich du jour (with a cup of soulful tomato soup) is an event. But Kaplan's at his best when he's playing the midwestern homeboy. His pan-roasted walleye on a shellfish risotto puts the “great” back in the Great Lakes.
